dry red wine 1 cup
bay leaf 1 or 2
thyme 1/2 tsp
parsnips, 3 medium, peeled and sliced, 1/2 inch
brussels sprouts, 2 1/4 cups
1/4 cup parsley

mix 2 tbsp flour, salt and pepper in bowl. toss in beef and coat. heat oil in dutch oven, brown beef about 8 to 10 minutes. move to plate and set aside.saute onions in same pot for 3 minutes. Add mushrooms and saute 2 minutes more.add potatoes, carrots, wine, broth, thyme, bay leafs, and cooked beef. bring to boil then reduce heat, cover and simmer for 1 hour.add parsnips and Brussels sprouts and cook, covered for 1/2 hour. remove bay leaves and stir in parsley.return to boil and add 2 tbsp of flour mixed into small amount of water to thicken.
