Preheat oven to 350 degrees. Put bacon, onion, carrot and garlic in a food processor. Process on high 30 seconds. Transfer bacon mixture to a large bowl. Add ground beef, maple syrup, vinegar and salt. Mix all ingredients by hand and form into a loaf. Place meatloaf in center of a large roasting pan.
