Here is how you make Di;s Breakfast Sandwich:

Poach one egg. I use silicone ring in non stick pan. Add 1/4 water in pan and plan a tblsp vinegar (I used rice vinegar). Heat to bubbling and place egg in ring. Sprinkle a dash of Celtic Sea Salt and fresh ground pepper.While egg is cooking, spread 1/2 of the Laughing cow cheese wedge on each wheat thin half. Place spinach on lower bun and top with back bacon. Place poached egg on top of bacon and top with tomato slices.
