pull muffins apart and lay on a foil-lined cookie sheet or cutting board. Place 1/2 slice of cheese and 1 ounce ham on each top half. Scramble eggs (I find it easiest to do them in egg shaper thingies on the griddle...you know, the round things? Yeah...).
