Here is how you make Easy Sausage Lite Breakfast Casserole:

Preheat oven to 425 degrees.In skillet, brown turkey sausage to crumbles. Remove, spray pan with Pam if desired, spread (in order) in pan, diced potatoes (fresh or frozen), sausage crumbles, kale (or other greens of choice), pepper/onion blend, and tomatoes.Heat over medium heat until potatoes start to brown, about 15 minutes. DO NOT STIR. Meanwhile, blend together milk, eggs, cheese and poultry seasoning.When potatoes are as brown as you want them (they are not going to get much browner.), pour egg mixture evenly over everything. Place in preheated oven, reduce temperature to 375 degrees and cook for about 45 minutes. Check at about 30 minutes and adjust temperature as needed.Seasoning may be adjusted. I usually omit salt unless we have company and add a little garlic and cracked pepper to egg mixture.Four generous servings or six 'healthier' servings.
