Add minced garlic and onion; cook til onions are clear. Add corn, beans and tomatoes and simmer for about 5-10 minutes. Meanwhile, pour corn muffin mix in a 9x13 glass dish and stir in milk and egg. Mix until all ingredients are blended; then spread out to cover bottom of dish evenly. Pour beef mixture over top of corn muffin mix. Bake at 400 for 20 minutes. Sprinkle evenly with cheese and bake for another 5 minutes. Makes about 12 1-cup serving. Serve with sliced avocado, banana peppers or taco sauce.
