Here is how you make TX_3XDAD's Chicken Fried Venison:

1. Takes the backstrap, cut away any muscle sheath (white connective stuff), and slice against the grain into 24 1/4" slices. Yeah, I know, it's not perfect, but it did work for the deer...2. Take a casserole dish, add about 1" of milk, and make a layer of strips. Add more milk until layer is covered. Keep adding layers until it's all under milk. If you want it spicy, add a couple of tablespoons of hot sauce.3. Cover with plastic wrap, keeping the air out as much as possible, and put in fridge for at least a day. Up to three days is fine. This helps tenderize the meat and mostly pulls the gamy flavor from it.4. Crack the eggs and whisk in a large bowl. On a large plate or deep dish mix the dry ingredients.5. Put about 1" oil in a pan (I use cast-iron) and bring to ~325 degrees F. While it's heating get two more plates ready: one for holding the prepped slices, the second for stacking the finished product. Have a good number of paper towels ready to dry out the finished strips.6. Take the venison strips out of the milk, dip and roll in the egg, then bread generously. Place in the prep plate. If you do it efficiently, you can be one load of venison ahead of the game.7. Lay a layer of strips down into the oil. two minutes MAX on each side. For thin strips, 90 seconds will do.8. Remove and place on the finish plate, with a double layer of paper towels above and below the strips.9. Continue 'til you're out of strips.10. You can mix the remaining flour with the egg, then make patties and fry those up as well. Venison hush puppies, go figure.Note that there's no salt in the recipe.
