2 12 oz. cans of V8 vegetable juice
1 medium yellow onion, diced
4 cloves garlic, minced
2 Tbsp olive oil
1 packed chili seasoning blend

Here is how you make Beth's Quick and Easy Chili:

Sautee the onions and garlic in the bottom of a large stock pot until soft and translucent. Add the ground beef and cook until thoroughly brown. Add the rest of the ingredients to the pot (drain the beans slightly, some juice is ok). Simmer in the pot until the chili has thickened slightly (45 min). Enjoy!This is a great recipe for using up vegetables that are on their way out. I have added bell peppers, zucchini and carrots with great success.
