My mom used to make this recipe. Of course, she did it with a gazillion meatballs (always frozen), full-fat sour cream (lots of it), and normal high-sodium beef broth. My version is marginally better, although it does still use the frozen meatballs -- note, you can make it better still by doing your own meatballs!This is meant to go on top of rice, noodles, or some other carb source. Can also use a splash of red wine early on if you want a hint of rich wine flavor in the sauce, also easily skippable. You may need cornstarch or other thickening agent if you're in a hurry & don't want to reduce it down all the way (or if you want there to be extra sauce). How Do I Make Meatballs and Sour Cream?Here is how you make Meatballs and Sour Cream: Dice the onion, and then put it in a large cooking pan. Heat until onions are clear, then remove the onions and brown the meatballs. Re-add the onions when the meatballs are browned, and then pour in the beef broth.Simmer the meatballs in the broth until the liquid has reduced significantly -- you're looking for a gravy-like consistency ideally. If necessary, add some cornstarch or other thickening agent to aid in the process. Right before serving, turn off heat and stir in 8oz of sour cream until it's mixed well.
