Chili Powder 12 tortillas 2 1/2 size Enchilada Sauce 1 pound of sharp cheddar cheese How Do I Make Mrs. Colburn's Enchiladas?Here is how you make Mrs. Colburn's Enchiladas: Saute` meat with onions and garlic. Add tomato soup, chili powder and salt and pepper to taste. Simmer 20 - 30 minutes Warm tortillas in microwave until soft. Dip in enchilada sauce that has been heated. Remove tortilla from enchilada sauce and place a heaping tablespoon of meat mixture on tortilla and roll up. Place in a 9x13 inch pan lined with aluminum foil. Repeat with the remaining tortillas. After all 12 tortillas are filled and rolled and placed in pan, pour remainder of meat mixture over rolled up tortillas. Cover with grated cheese. and then pour remaining enchilada sauce over all. Bake at 400 degrees for 30 minutes. Can be made ahead and refrigerated and then heated at 400 degrees for 40 to 45 minutes.
