This has been my favorite comfort food for forever. The original recipe called for lots of fat from salt pork, and no garlic or onions directly in the filling. To replace fat flavor, for a healthier flavor, I put them in the filling, replaced white rice with the brown and used a mix of meats for flavor. This has taken me years of trial and error to get it to near the authentic polish dish I remember.

How Do I Make lower fat stuffed cabbage?

Here is how you make lower fat stuffed cabbage:

Steam cabbage until "al dente". If overcooked, they will break when rolling them up. Allow to cool and at stem, cut one leaf off at a time. The center leaves are usually not cooked and too firm to roll, so I put them back for a second steaming. Shave the rib of each leaf, don't cut them off, just enough so the rib is level with the rest of the leaf. This makes for easier rolling.Saute onions and garlic in the olive oil and cook 4 cups raw brown rice to package directions.Put the meats in a large bowl and mix well. Add onions and brown rice along with salt and pepper. (Yes, I really put that much salt and pepper.) Mix very well.To roll the leaves, cup the stem side in your palm. Place enough filling, so the part of the leaf, that is in your hand, is full. Fold over so filling is covered, then fold in each side and finish rolling to end of leaf.2 ways to cook:In oven: Place each roll into a 9 X 11 pan, prepared with cooking spray. For the size of this recipe, you might need 2 pans. Sprinkle vinegar on top. If you make 2 layers, add about an hour to cooking time. Place in pre-heated oven, 350 deg F. Cook 2 hours, (single layer) Crock pot: Spray pot with cooking spray. Layer the rolls and sprinkle with vinegar. Cook on low for 8 hours. I usually put half in the crockpot and half in the oven. I make a lot as cooking this is "an event" lol. I freeze it in portion sizes, in zip lock bags. I find it loses flavor after a month in the freezer. You will have cabbage cores left over. I chop this up and freeze it in freezer bags and use later in soups.Number of Servings: 25Recipe submitted by SparkPeople user REENIE71456.
