Spray cup of a muffin tin with no stick cooking spray. (Seriously, don't forget this step!) Line each with a slice of ham, "ruffling" it in to make it fit. Put a tablespoon of cheese on the ham. Add pepper and salt. Top with tomato, if you like it. Bake 18-20 minutes until eggs are set. Serve immediately.
