This is truly a cook once and serve three times... I doubled this recipe and ended up with enough sauce to make lasagna three separate times (this recipe is the doubled version)... I assembled the recipe and divided the remaining sauce into two gallon ziplock bags and froze for a future date.

2 lbs of lean ground beef

2 onions

2 cups of water

3 tbs of Parsley Flakes

1 - 28 oz can of Diced Tomatoes

2 - 26 oz jars of spaghetti sauce

6 tsp. minced Garlic

4 tbsp. Italian Seasoning

4 cups Low Fat Cottage Cheese

3 cups Ricotta Cheese (I used whole Milk - it's what I had)

2 Eggs

5 oz bag of Fresh Spinach - rinsed

5 dry Lasagna Noodles

1 cup Mozzarella Cheese


How Do I Make Rhonda's Healthier Lasagna?

Here is how you make Rhonda's Healthier Lasagna:

Brown Ground Beef - when this is done, put it in a strainer and run HOT water over the beef to rinse off all the excess fat.While Beef is cooking, dice onions.In a large bowl combine both jars of spaghetti sauce, water, parsley flakes, diced tomatoes, garlic, italian seasoning, cottage cheese, ricotta cheese and eggs.Preheat oven to 350 degrees.When beef is rinsed, combine with the sauce.When sauce is finished, spray a 9x13 glass pan.If the kids are picky about the spinach then put it in a blender and add it to the sauce before assembling. Psych them out!!! hahaha!!! You can't even taste the spinach!!!Layers are: One to two ladles of sauce in bottom.Spinach.Dry Noodles.One to two ladles of sauce.Spinach.Dry Noodles.One to two ladles of sauce.Mozzarella Cheese.Place on a pan to catch any bubble over sauce. Cover with aluminum foil for the entire cooking session 60-90 minutes.
