75 g cappacolla ham, sliced thinly
1/2 onion, sliced thinly in half rounds
125 g spinach, wilted and squeezed out
13 eggs
1 1/2 cups shredded aged white cheddar

Combine flour and salt in food processor. Blitz to mix. Add shortening and butter in pieces and whiz until combined. Add 1 tbsp water at a time by the drop through shoot until a ball ust forms. Wrap dough in plastic and chill for 1/2 hour. Roll out dough on floured paper. Fit into bottom of 12" tart pan.Layer the mortadella, cappacolla, onions and spinach in the shell.
