Preheat oven to 375 F. Place ground venison, mushrooms, onion, garlic, and seasoning in a cast iron skillet. Saute, breaking up ground venison, until the juices have almost evaporated. Stir in mushroom soup and simmer until sauce thickens. Remove from heat and cool slightly, then sprinkle green peas evenly on top of beef. Combine hash brown potatoes, chives, 1/2 cup of the cheese, mayonnaise, and additional seasoning, if desired. Spread evenly on top of meat layer.
