spray crockpot w/ pam and turn on lowmelt butter, add flour, cook for a minute or so, add milk, turn up heat and bring to simmer (stirring constantly) till it thickens. Remove from heat, add cheese, spices, and tobasco and stir till it melts. Set aside.In crockpot, layer half potatoes, ham, onions and celery. Pour half the sauce on top.
