Peel potatoes, cover with salted water and bring just to the boiling point; drain and let cool. This keeps the potatoes from turning dark in the sausage.Grind all the meat, potatoes and onion through a 3/8" grinder plate and place in a heavy duty mixer. Add salt, ground allspice and water and mix thoroughly. You will have a rather mushy meat/potato mixture. Chill thoroughly. The sausage is very perishable so is best kept frozen. Using the amounts listed in the recipe, the total amount of sausage mixture was 4 lb. 10 oz. I divided the sausage into 4 packages of 18.5 oz. each for the freezer.
