This is a one skillet dish (casserole like). It can be eaten alone with a salad, used as the filling for a burrito or even as a chunky dip.-- this is just something I came up with trying to use up the ingredients I had on hand. It's more of a "tex-mex" thing I used to eat when I lived in Texas..but it's definitely my own creation.

.5 cup Yellow Sweet Corn, Frozen
1 cup Beans, black
2 cans Rotel Diced Tomatoes with Green Chilies
1 3oz can Tomato Paste
1 cup Serrano Peppers, chopped

Spices to taste:
Smoky Paprika - ~1 tsp
Cayanne Pepper ~ 2 tsp
Cumin - use at least 3 tbls
Chili powder ~ 2 tbls
Salt - just a pinch
White Pepper ~2 tsp

makes 6 - 8 servingsSaute onions, garlic & bell pepper and serrano peppers until soft.Add Bison (chopping it up into bitsize pieces) meat and saute togetherAdd canned tomatoes (with juice), Add Black Beans (with juice), Add CornAdd all spices - tasting as you add. Hint: add a little of the spice now, then tase and add more later as needed.Simmer - just below boiling. Add Brown rice, stir and cover - turn down heat. Cook until brown rice soaks up most of the liquid and is tender.Add tomato paste and stir together.
