Ham 6 oz.
1 small onion diced
1/2 red pepper diced
1/2 green pepper diced
1/2 yellow pepper diced
2 cups Carolina Jasmine rice
3 TBSP olive oil
2 cans Chicken Broth
5 cloves of garlic crushed
1 can Goya Green Pigeon Peas
Cilantro, 1 handful chopped
2 packets of Sazon seasoning


How Do I Make Evelyn's Spanish Rice?

Here is how you make Evelyn's Spanish Rice:

saute veggies in olive oil with ham. Add pigeon peas & stir in 1 can of chicken broth & add 2 packets of Sazon. Simmer x 5 min on low to med. heat. Add 3-5 cloves of minced garlic & chopped cilantro. Then add rice & stir together adding the second can of chicken stock. Make sure the liquid covers the rice. Cover & cook x 20 minutes on low to med. heat. Uncover & give a few stirs, then recover & turn to low for another 15-20 minutes. Serving Size: 10 x 1/2 cup servingsNumber of Servings: 10Recipe submitted by SparkPeople user IRON__GIRL.
