Dice veggies and saute in 1 TBS oil. Remove from pan. Add pork (cut into thin strips) to pan and saute in 1 TBS oil until brown. While pork is cooking, wisk together garlic, ginger, marmelade, soy sauce, chicken broth, cider vinegar and corn starch in a separate bowl. Add veggies back into frying pan once the pork is done.
