You can use hot sausage, chunky tomato sauce, any kind of vodka you choose. It's all about what tastes good to you. The quality of vodka used does play a pretty big part in the taste. Better quality vodka gives more of a zing. You can also omit the sausage and start by just heating the tomato sauce, and adding the vodka to that to cook off. First, remove the sausage casing and cook the sausage, breaking apart into small pieces. When sausage is cooked through, add vodka, and reduce until liquid is almost gone. Add tomato sauce, heat until bubbling, then add bullion, mix until well combined. Simmer until slightly thickened, then add heavy cream. Bring back to a simmer, serve immediately! Traditionally, this sauce is served with penne, but any pasta will do. I have also enjoyed this over rice. Experiment!
