Preheat oven to 425 degrees. in a shallow baking pan combine chopped carrots, chopped celery, chopped onion, and minced garlic. Drizzle with oil; gently toss to coat. Spread veggies in a single layer. Roast, uncovered for 15 to 20 mins or until veggies are light brown on the edges. In a large Dutch over combine the roasted veggies, broth, chopped Canadian bacon, marjoram, and 1/2 tsp pepper. Bring to a boil; reduce heat and simmer, covered, for 45 mins, stirring occasionally.Stir frozen peas and parsley into mixture in Dutch oven; cool slightly. Transfer veggie mix, half at a time, to a food processor or blender. Cover and process or blend until nearly smooth. * If using the blender top, ensure the pour spout is open to allow ventilation so the pressure doesn't build up and blow the top off the blender. Return pureed mixture to the Dutch oven and add the lemon juice. Season to taste with additional salt and pepper.Can keep in fridge for up to 3 days or can freeze for up to 2 months.
