1 c onion, chopped
1 c celery, chopped
1 c leeks, chopped, white only
1 c carrot, chopped
1 c sweet potato, chopped
1/2 tsp salt
1/2 tsp black pepper
pinch cinnamon
1 lb ground bison
5 cup low sodium beef stock
2 1/2 c water
1 can tomato paste
2 cans diced tomatoes, drains & liquid reserved
1 tbsp honey
2 14-oz cans beans (black, kidney, pinto, etc)

Here is how you make Hearty Soup:

1. Heat oil in Dutch oven or large skillet over medium-high heat. Add onion, celery, leeks, sweet potato and carrots.2. Saute until veggies begin to soften - takes 5 to 7 minutes. Stir.3. Add seasonings & ground bison. Brown the bison and mix with veggies.4. Stir in tomatoes, stock, water, and reserved liquid (add only enough water to make 2 1/2 c of water & tomato liquid combo).
