In the meantime, dice raw carrots, celery and potatos. Remove the shank from the water, and the ham from the bone. Cut into bite size pieces and return to the pot along with the diced vegetables. Continue to simmer for about 2- 3 more hours uncovered until the soup is as thick as you like.
