pound split peas, 3 cups chopped onion, 1 leek (white and pale green only) 3 tbsp chives 10 oz trimmed, baked ham, 4 cups ham broth, 2 carrots chopped.

Here is how you make Don's Split pea soup:

10 - 8oz (1 cup) servings. ( after removing all but about 10 oz of ham, boil ham bone for 1 hour simmer for 5 hours, strain, separate and set aside meat, chill broth remove fat. Add water to make about 2 quarts. rinse peas add to water with 1/2 onions bring to boil then simmer partially covered till peas are soft. 1-1. hrs. sauté' leeks, remaining onion, carrot in olive oil till caramelized, add to soup with chives and meat, simmer for 1-1.5 hours or until peas have fallen apart and soup is thick, salt and pepper to taste.Number of Servings: 10Recipe submitted by SparkPeople user LAGITANE.
