DirectionsPreheat oven to 400F.Lightly grease a 10-inch pie pan. In a medium frying pan lightly spray with canola oil or use butter, zucchini and Canadian bacon until vegetables are translucent and bacon is cooked. Sprinkle with a pinch of Cayenne Pepper and Black Pepper. Add spinach and cook till wilted. Set aside to cool for a few minutes.In a large mixing bowl, whisk together eggs, flour, baking powder and salt. Whisk in milk, then vegetable mixture.Pour quiche base into prepared pan.
