In a heavy oven proof skillet, saute mushrooms in B&B spread then add ham and scallions. When about cooked, add spinach and turn off skillet. Mix eggs, egg whites and thyme and pour over vegetables then sprinkle cheese over the top and put into a 350 degree oven for about 10 minutes until set.
