12 oz beef eye of round (approx. 2 pieces, cut in chunks approx. 1" sq)
1 large potato, raw, peeled and cut in chunks
1 large carrot, raw, cut in chunks
1 medium onion, cut in chunks
1 cup low sodium beef gravy (dry mix...)


How Do I Make Simplicity Stew?

Here is how you make Simplicity Stew:

Peel potatoes, cut them and the carrots and onion in chunks, drop into stew pot and fill with just enough water to cover. Should be a cup, possibly two. Heat to boiling, maintain light boil until vegetables are tender. Meanwhile, brown meat in oil in non-stick pan. Add gravy mix a bit at a time, stirring frequently. Add a bit of the 1 cup of water, a bit at a time, until all the pieces of meat are well coated and a bit sticky. Vegetables should be done by then, so add the meat to the pot and mix well, then let simmer for an additional ten minutes (or more--doesn't hurt it to cook longer!)
