Cut Boneless Lamb into thin slices and then into thin strips.2. MARINADE for Lamb: Mix together the Rice Wine, Sichuan Peppers, and 0.5 Tbsp Soy Sauce.3. Add the Sliced Lamb strips to the above marinade and marinate for about 10 minutes.4. SAUCE: Mix together the 2Tbsp Hoisin Sauce, 0.5Tbsp Soy Sauce, 1Tbsp Vinegar, and 1 tsp Chili Garlic Sauce. Keep in reserve for use near the end of cooking.5. Add 0.5 Tbsp oil to hot pan.6. When oil is hot, add the Garlic and stir fry for about 10 seconds.7. Add the Lamb and stir fry with Garlic until the Lamb is barely pink. Then remove the Lamb from the Pan.8. Add the onions and celery to the pan and stir fry for a few minutes.9. Return the Lamb to the pan, add the reserved Sauce mixture, and cook until heated through.This is a recipe that I've modified to reduce the salt content. You can further reduce the salt by using low-sodium Soy Sauce. I don't like the taste of Low Sodium Soy Sauce, so do not use it. You can increase or decrease the heat by the amount of the Chili Garlic Sauce you use. The original recipe had twice the amount of Chili Garlic Sauce, which I liked, but my family found just a bit too hot. The original recipe also does not include veggies like celery. But I like the crunch of the celery and at times have also added Bell Pepper strips as well.
