Here is how you make Lean and Juicy Bison Tenderloin:

Preheat oven to 425.Heat a heavy-bottom, oven-safe skillet on medium high on the stove top with 1 Tbsp. of olive oil.Season one side of thawed tenderloin steaks and place seasoned side down on the skillet once it is hot. This will sear the meat and seal in the juices. Do NOT move the meat while on the skillet! Let it sear for 5 minutes. Season the exposed side of the steaks. After the first side is properly seared, turn the steaks over, and immediate move the skillet with steaks into the oven for 7-9 minutes, depending on desired doneness. (7 for medium rare, 8 for medium, 9 for medium well)Once the steaks are finished, remove them from the oven and let them rest for 4-5 minutes before serving. This allows the meat's juices to redistribute throughout the steak.
