Lightly dust 12 oz. of carefully trimmed and pounded veal (for scaloppini) with 1/4 C flour and brown in non-stick pan with 1 T olive oil. Remove veal, add to pan 1 slice onion and 2 T tarragon. Cook with a low heat until onion is translucent and not brown. Add 3/4 C sliced mushrooms and 1/4 C Madeira. cook about 5 min. Add 1/4 C sour cream, and salt and pepper to taste.
