Makes 18 muffins. Pre heat oven to 350. Saute onions if you want (I like them better that way.) Drain the tomatoes so they aren't too watery or use fresh. Mix it all together in a big bowl :) dump in muffin pans. I use silicon muffin pans, if you don't, you'll want to spray with cooking spray. Cook until desired done-ness, about 30 min.
