1c teff flour
1/2 c tapioca flour
1/c coconut sugar
1 1/2 t guar gum
2 t baking soda
1/2 t sea salt
2 c mashed ripe bananas, 4 lg or 5 med
1 c unsweetened coconut milk (so delicious brand)
1/4 c melted virgin coconut oil
1 T organic maple syrup
2 t vanilla
1/2 c enjoy life allergen free semi-sweet mini chocolate chips (optional; not included in nutritional value)
1/2 cup chopped organic frozen cherries

Here is how you make Banana Teff Bread with Cherries (optional chocolate chips):

Preheat oven to 375 degrees F. Lightly oil 4 mini-loaf pans, 1 muffin pan, or 1 bread loaf pan (heat the oven to 350 if you choose this option.)In a large bowl combine the flours, tapioca flour, sugar, guar gum, baking soda, and sea salt. Sift together.Mash the bananas with a fork. It should equal approx. 2 cups. Mash more if needed to get 2 cups. Add the milk to the mashed bananas and whisk it together with the oil, vanilla, and maple syrup. Pour the wet ingredients into the dry and gently mix together being careful not to over mix. Gently fold in the cherries and/or chocolate chips.Spoon batter into oiled pans, gently rounding the tops with the back of a spoon into a loaf shape. Bake at 375 degrees F for about 30 to 35 minutes (20 to 25 minutes for muffins, or 1 hour and 20 minutes for 1 single loaf). Loosen sides with a knife and gently take out of pans and place on wire rack to cool. Makes a 20 slice whole loaf of bread.
