1/2 tsp. cinnamon (I used allspice b/c that is all I had)

Here is how you make Cantaloupe Bread:

Preheat oven to 350 degrees. Grease your cooking dishes.In a medium bowl whisk together flour, salt, baking soda, baking powder and cinnamon. Set aside.In a large mixing bowl, combine eggs, oil, applesauce, sugar, vanilla, and cantaloupe puree. Mix well. Stir in flour mixture and mix until just combined. Pour into prepared pans and bake until desired doneness (approx. 45-55 minutes).
