Cut up yams and saute in olive oil. Add onions, mushrooms and broccoli. Cover and cook for 5 minutes until vegetables start to soften. Beat 2 whole eggs with 4 egg white and 1/3 cup of milk. Add shredded cheese. Place yam and vegetable mixture in a casserole dish. Pour egg and cheese mixture over vegetables.
