Here is how you make Chicken Frittata:

In a non-stick pan (with a lid if possible) start rendering the bacon. Before it browns too much, add the onion and the chicken. Cook for about 2 minutes, then add the tomato and spinach. Season with a bit of salt and pepper. When the spinach starts to soften, add the eggs. Cover with the lid and let cook over medium heat for about 5 minutes or until setting around the edges. Sprinkle the cheese over the top, replace the lid and continue to cook until the centre is also set.
