Preheat to 325. Lightly grease 2 loaf pans or 2, 12-muffin each, tins. In a stand mixer, combine flax and water, whip until it?s thick and creamy, about 2 minutes. Add oil, vinegar and sugar and combine. Stir in pumpkin and vanilla. Separately, combine flour, cinnamon, nutmeg, baking soda, baking powder and salt. Add wet mixture to this and stir just until combined. Fold in chocolate chips. Don?t overmix! Divide batter into prepared pans, bake loaves 60-70 minutes and muffins 20-30 minutes.
