1-1/2 tbsp pure vanilla extract
3 tbsp finely ground flax seeds
10 drops stevia
2 tbsp melted butter or coconut oil, plus additional 1 tbsp for brushing tops
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp sea salt
1/2 c plus 1 tbsp coconut flour
3 Tbsp buckwheat flour

Here is how you make Grain Free Coconut Flour Biscuits:

Preheat oven to 400 degrees. Line cookie sheet with parchment or spay with nonstick spray.Place lemon juice in glass measuring cup and add enough coconut milk to make 1 cup. Add the vanilla, flax and stevia to the cup, stir. Whisk in the 2 tbsp of melted butter until evenly combined. Set aside while measuring dry ingredients, at least 2 minutes.In medium bowl, sift together remaining dry ingredients. Poor liquids over the dry and stir quickly to just blend. Do not overmix. It will seem a bit soft initially but will absorb the liquid fairly quickly; this is as th should be. You may need to add 1-2 tbsp more mild to attain desired texture. The mixture should resemble a thick cookie dough.Using a large scoop or 1/3 c measuring cup, scoop the batter and place mounds on the cookie sheet. Flatten each mound slightly.Bake for 12 minutes in preheated oven. Remove from the oven and gently brush with the melted butter. Rotate the pan and return to the oven for an additional 12-15 minutes, until tops are a deep golden brown-do not underbake! Remove from oven and cool on the cookie sheet. Carefully remove for storage. Makes 6 biscuits. May be frozen.Note: If you try to eat these while still warm, the centers may seem too moist.
