1 c. sweetened flaked coconut
1/2 c. vegetable oil
1/2 c. walnuts (1 3/4 oz) chopped
1/3 c. sliced almonds (1 oz)
1/3 c. green (hulled) pumpkin seeds (1 1/2 oz., not roasted)
(I just used sunflower seeds)
1/3 c. packed dark brown sugar
1/4 c. mild honey
Pinch cinnamon
Pinch salt
1 c. dried tart cherries (I'd put less in next time.)
1/2 c. dried blueberries.
1/2 c. diced (1/4 in.) dried pears (3 halves)
1/2 c. diced (1/4 in.) dried apricots
1/3 c. raisins (or golden raisins)

(Accompaniment: Sliced bananas; plain yogurt flavored with vanilla extract.)

Put oven rack in middle position and preheat oven to 325.In a large bowl, stir together all ingredients from "oats" to "salt" until combined.Line a large shallow baking pan with parchment paper and spread the mixture evenly on it. Bake for 30 to 35 minutes, stirring occasionally (every ten minutes) until golden brown. Transfer to a cooling rack to cool, stirring occasionally, about 45 minutes.
