2 slices ham, extra lean (or 1 slice if you want to reduce the calories)
1 inch feta cheese (or another crumbly cheese of your choice. Queso fresco works just as well)
1 whole wheat pita, halved
Salt and pepper to taste

Here is how you make Microwave Greek Scramble:

In your coffee mug place the 1 cup fresh baby spinach, the 1/2 cup fresh mushrooms, and the 1-2 T diced onions. Place the mug in the microwave and cover with a paper towel. Microwave on high 1 minute. While that is microwaving, slice the ham into bite sized pieces. Remove the mug from the microwave and stir vegetable mixture with a fork. If there is a lot of liquid present, drain a bit. Add your eggs (or egg substitute) and the sliced ham. Stir again and cover with the paper towel. Microwave on high again for 45 seconds. Stir. Depending on your preference microwave the mug 1 more time for 45 seconds to a minute. Stir. Salt and pepper to taste. Spoon mixture in equal portions into your pita halves. Crumble feta on top.
