1 tbsp sugar

How Do I Make Low-Cal Bagels?

Here is how you make Low-Cal Bagels:

1. Warm 1/2 cup of water to around 95 degrees (exact temp doesn't matter) 2. Add yeast and sugar to water. Stir until well dissolved. Let sit 5 min. 3. Mix together flours, bran, and salt. 4. Pour yeast mixture into flour mixture. Add about half the remaining water. Stir until a nice dough is formed, adding water as needed. 5. Turn out dough onto a well-floured surface. Knead for about ten minutes. The dough will remain more sticky than most bread doughs. Use enough flour to keep it from sticking, but don't expect it to be totally dry. 6. Put dough into well-oiled non metallic bowl and let rise until doubled in size. This should take around 1 1/2 to 2 hours. 7. Punch down dough and let rest ten minutes. Put a pot of water on to boil. Make sure the water is deep enough for the bagels plus some extra space. Deeper is better. Also, make sure you have something wide enough to easily get the bagels out with a slotted spoon or something. 8. Separate the dough into eight pieces. Shape each piece into a ball, and then stick your finger into the middle to make the hole. WIden it by twirling it around your fingers (or however you want to widen it) and place on a well oiled pan. Let rise 20 min. Preheat your oven to 400 degrees. 9. Poach the bagels. (This gives them the hard outside and nice chewy inside.) Take a slotted spoon (or something relatively flat and wide with holes in the bottom) and drop the bagels into the boiling water. They may sink to the bottom, they may not. But let them hang out in the water for about 30 sec, then flip them and leave 30 mor sec. Then remove and put back on the pan. Repeat for each bagel. 10. Get steam in your oven. Unless you have a facier way of doing this, you can just open the door, spray the air or the sides a few times with a plant sprayer and shut the door quickly. Do this once before you put the bagels in. Then put the bagel pan into the oven, and spray again. Repeat once or twice more in the beginning few minutes of baking. This helps them get a nice crunchy exterior. 11. Bake about 19 min. or until golden brown on the outside.
