1.25 TB vanilla extract
1 medium apple, peeled & chopped
replacement for 2 eggs (applesauce, mashed banana, flaxseed with water, etc)

1/2 cup brown sugar
1/4 cup white flour
3 TB cup vegan buttery spread
1.5 tsp cinnamon

Makes 12 large muffinsMix flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.In a separate large bowl, beat together butter, sugar, vanilla, and egg replacements. Stir in the chopped apples. Slowly stir in the flour mixture.Pour into 12 muffin tins with baking liners.In a small bowl, make topping mixture. Combine sugar, flour, butter, and cinnamon. Cut together into you get a crumbly consistency.
