1. Preheat oven to 325.2. Spray muffin tin with cooking spray3. Cook mushrooms. Let cool and add scallions, swiss cheese, ground pepper.4. Whisk eggs, egg whites and milk. Divide egg mixture amongst muffin cups (about 1/4 c each muffin cup)5. Add ham mixture to each cup (about 2 T)6. Bake until tops are beginning to brown, about 25 minutes. 7. Cool on wire rack for 5 minutes. Place a rack on top of the pan, flip it over and turn the quiches out onto rack.
