Heat the olive oil in a non-stick pan. Add onion, saute until clear. Add mushroom and garlic, cooking until mushroom is soft. Add beaten eggs - cooking as an omelet until eggs are set on top. Flip over and place tomatoes on top if you want them hot. As soon as the bottom is gently browned, slide onto a plate.
