This is a pretty bland biscotti. The orange & pecan gives it the right hint of flavor. The recipe is basic old school. I've just been tweaking it a bit, trying to make it a little healthier for me. You can make it as fancy as you like, by adding chocolate dipping or drizzle.I used Splenda for Baking in this recipe. Not the one that has sugar mixed with it, but the regular Splenda. I had to use twice as much Splenda (2 c) as I would use sugar (.75 c) but I figure the least reg. sugar I use works for me. I wanted real-like dense biscotti. Also, the egg substitute I added at the end when the dough seemed a little dry. I only added a splash to moisten it up. This is the 2nd time I've made this, and the first time I made it using Splenda. Just trying to get some real, yet low sugar/fat biscotti while trying to perfect the recipe.

Egg, fresh, 3 large
Vanilla Extract, 1 tsp
Orange Peel, 2 tbsp
Orange Extract, 0.5 tsp
Egg White substitute, liquid (Egg Beaters), 1 tbsp (remove)


How Do I Make Orange-Pecan Biscotti?

Here is how you make Orange-Pecan Biscotti:

Preheat oven 350 degrees. Toast pecans for approx. 6 min.Lower oven heat to 300 degrees.Mix in mixer the dry ingredients: flour, splenda, baking soda and salt. Wisk eggs, vanilla & orange extracts and orange peel/zest together in a small bowl and add to dry ingredients in mixer. Add pecans half way into the mixing of wet & dry ingredients.Take dough out and split into half. On lightly floured surface, roll into two logs. Place on parchment paper on baking sheet and bake at 300 degrees for 35-40 minutes. Take out and let cool on wire rack for 10 min. Keep oven heated at 300 degrees.With serrated knife, slice logs into 1/2 inch thick and place on parchmented baking sheet. Bake 10 min.; then turn over and bake another 10 min.Let cool.
