In a separate medium bowl combine the flaxseed meal, egg whites, soymilk, and applesauce, whisk together until completely combined. Reserve blueberries untll later.Add the wet ingredients to the dry and whisk together.Peheat a good nonstick pan to medium/ low heat and add 1/2 tsp canola to the pan (unless you are confident your pan that good, then I would go without).Pour enough batter to spead to about 4" and add a sprinkle of blueberries to garnish the top (this will keep them from turning your batter blue and give you a little extra antioxidants for the day).Note: this recipe should make twelve 4" pancakes. I broke down the nutrional information per pancake. I find that two pancakes, plus 1tbsp real maple syrup (doesn't need butter), and a half a banana makes a good weekend breakfast.
