Makes 10 4" pancakesSift flour and measure 1 1/2 cups. Sift measured flour with baking powder, salt and cinnamon (if using). Separate yolks in one bowl and whites in another. Beat yolks and add canola oil and milk, mix. Whip egg whites. Pour liquids into flour mixture and mix, fold in egg whites. Put a small amount of oil on griddle and heat. When a sprinkle of water sizzles on the griddle pour pancake batter on griddle until if forms a 4" circle.
