Here is how you make Vegan Autumn Pancakes:

Mix 1 Tbsp flax meal (ground flax seeds) with 2 Tbsp water, set aside and let it thicken.Mix 1 c Aunt J. ww pancake mix with 1 c soy milk, add (baked) sweet potato, mix it all together. Add flax/water mix, spices and flavoring (I like vanilla best), let sit for a few minutes.Pour onto hot griddle or frying pan (slightly greased with coconut oil or any other oil -I prefer coco for the flavor), pour 1/4 c full of pancake mix per pancake and cook in low temperature for 2-3 minutes, then flip and cook again for 2-3 minutes.Serving Size: Makes 9 pancakes (using a 1/4 c to pour 1 pancake)Number of Servings: 9Recipe submitted by SparkPeople user MOMOF2GREMLINS.
