In a medium mixing bowl stir together the dry ingredients. Make a well in the center of the mixture. Set aside.In another medium mixing bowl, combine the eggs, milk, vanilla, and oil. Add egg mixture all at once to the dry mixture. Stir just until moistened (batter should be lumpy). Put into the refrigerator to rest for five minutes.In the mean time, heat your griddle or heavy pan to medium heat. If you aren't using nonstick cookware, lightly grease it.Pour about 1/4 cup batter onto the hot pan for standard-sized pancakes (about 1/2 cup for large or a tablespoon for dollar-size).
