Salt and pepper to taste. Saute mushroom and diced onion until onion is just clear, but still retains its texture. Crumble previously grilled salmon fillet into saute mixture and stir until just heated. Remove from skillet and drain on paper towel. Add second pat of butter to skillet and increase heat to medium. Pour egg mixture into skillet. When egg is almost set, spoon filling over one half and sprinkle with dill. Top with one half of the cheddar. Fold over and slide onto plate. Top with remaining cheddar (can be omitted if desired). Garnish with parsley. Serve with small cluster of grapes or other fresh fruit.
